Ingredients for 4 people:
- Slice of mature Oudendijk ± 1 cm thick
- 2 red onions
- 100 ml red wine
- 100 g cane sugar
- Pinch of salt
- Black pepper
- Toasted sesame seeds
- Shelled pistachios, finely chopped
Finely slice the red onion and bring to the boil with the red wine, cane sugar, salt and pepper. Allow to simmer over a low heat for at least half an hour until the moisture has almost completely evaporated. Remove from the heat and finely blend. Allow to cool until the mixture is lukewarm.
Chop the Oudendijk into cubes, dip in the sweet onion sauce or chopped pistachios.
Tip: you can also use ready-made onion chutney.
