Potatoes with prawns


- 400 g prawns
- 16 potatoes
- ¼ litre milk
- 200 g butter
- 2 eggs
- Prawn heads
- 80 g flour
- 200 g mature Oudendijk Light
- 1 lemon

Boil the potatoes, and make a mash, adding ¼ litre milk, 200 g butter and 2 eggs. Place the mash in an ovenproof dish and sprinkle with the prawns. Make a roux sauce with the butter and flour. Put the prawn heads in the milk and allow to stand for a while and then use this milk to make the white sauce.

Season with half of the mature Oudendijk Light and some lemon.

Pour over the sauce and sprinkle with the remaining mature Oudendijk Light. Place in the oven for 15 minutes at 180°C.
